Snickerdoodle

I know it’s unbelievable, but I only came across these cookies when I visited Texas last year. After driving the whole morning, we found a lovely place on the riverside in Austine and grabbed a cup of coffee. And a cookie, of course. Who can resist the temptation?
I chose a snickerdoodle and went to heaven. That little fluffy cloud with a hint of cinnamon made me the happiest girl on the planet.

Ingredients:
2 1/2 cup plain flour
1 cup brown sugar
1 tsp baking powder
250 g vegan margarine
4 tbs apple sauce
vanilla extract
pinch of salt
1/4 tsp vinegar

For rolling:
2 tablespoon brown or cane sugar
1 tablespoon cinnamon powder

1. Mix the margarine with the sugar and apple sauce then add all the dry ingredients. Do not overwork the dough, a quick mixing with a spoon is perfect.
2. Pop it into the fridge for 30 minutes to rest.
3. Preheat the oven for 200 C degree. Prepare your baking tray with grease paper.
4. Form a small ball from the dough and roll them in the cinnamon sugar mixture. I usually use an ice cream scooper for the uniform shapes.
5. Bake for 8-10 minutes.
