Vegan pecan brownies

I believe this is the easiest brownie recipe in the world. You literally have to throw the ingredients into a blender, whizz until smooth and 20 minutes later you have a healthy dessert on your plate. It’s not only vegan but gluten-free as well; probably that’s the reason it’s so popular in my family.

Ingredients:

1 can (1 1/2 cups) back beans
1 ripe banana
1/2 cup agave syrup
2 tablespoon coconut oil
1/4 cup cocoa powder
1/4 cup buckwheat flour
pinch of salt

50 g pecan nuts
50 g dark vegan chocolate

1. Preheat the oven for 180 C degrees. Line a small baking tray with grease paper.
2. Put all the ingredients apart from the nuts and chocolate to a blender. Mix for a minute until you get a smooth texture.
3. Chop the nuts and chocolate roughly and mix in with a spatula.
4. Bake for 20 minutes.
