Vegan Baklava Cigars

Trust me; this dessert is not as difficult as it looks. I was always afraid of making my baklava as I was worried it would take ages. But once I tried, I realised, that making your own is not only so much fun but also allow you to try different flavours. So feel free to come up with your syrup mixture, infuse with other exotic spices.

10 vegan filo sheets
olive oil for brushing

For the filling:
2 1/2 cups almond
3/4 cups pistachio
1/2 cup sunflower seeds
1/2 cup dates
3 tsp cinnamon powder
1 tsp ginger powder
1/2 tsp salt
1/4 cup fresh orange juice
1/2 cup maple syrup (I used a mixture of carob and maple)
zest of an orange

For the syrup:
1 1/2 cups orange juice
3/4 cup maple syrup
1 tsp cinnamon

1. First, prepare the syrup. In a saucepan, heat all the ingredients. Simmer on low until reduced half, then put aside and cool it down completely.
2. Chop all your nuts and dates then mix with the rest of the ingredients.
3. To make the cigars, take one filo sheet and gently brush over with the oil. Scoop 2 generous tablespoon of filling an inch from the bottom and mould with your hands into a cigar shape. Fold in the two sides and roll the pastry with the filling. Apply a little bit more oil on the sides and end to seal. Place into a baking tray.
4. Once your tray is filled with the cigars, cut them in half, put into a preheated oven. Bake for 30 minutes on 175 C degree.
5. Once the cigars are nice and brown, remove from the oven. Scoop the cold syrup evenly over them and let it cool down.
